Ingredients
◾1/4 cup of cooked spinach
◾4 large eggs
◾1/2 cup of crumbled feta
cheese, (about 2 oz.)
◾2 scallions, thinly sliced
◾2 Tbsp. of chopped fresh dill
◾Freshly ground pepper, to taste
◾2 tsp. of extra-virgin olive
oil
Preparation:
◾Squeeze spinach to remove any
excess water. Using fork, blend eggs in medium-size bowl. Add feta, scallions,
dill, pepper and spinach, mix gently with rubber spatula.
◾Set a rack about 4 inches from
heat source, preheat broiler.
◾Heat oil in 10-inch non-stick
skillet over medium heat. Pour in egg mixture and tilt to distribute evenly.
Reduce heat to medium-low and cook until bottom is light golden, lifting edges
to allow uncooked egg to flow underneath, about 3 – 4 min.
◾Place pan under broiler and
cook until top is set, 1 1/2 – 2 1/2 min. Slide omelet onto platter and cut
into wedges.
